The smell of yeast and sugar was a constant, warm hug. It clung to my clothes, my hair, even the inside of my lungs, a fragrant defiance against the cold, grey world I’d inhabited for so long. Five years. Five years of being a ghost in my own life, a prisoner of my own making. Then, Mr. Dan, with his flour-dusted hands and eyes that held the quiet wisdom of countless sunrises, had pulled me back from the edge.

Each day in the bakery was a gentle, insistent rhythm. The thud of dough being kneaded, the hiss of the oven, the soft chime of the bell above the door when a customer entered. It was a world away from the echoing silence of my apartment, the suffocating weight of my own thoughts. Here, there was purpose, a tangible outcome to every action. A loaf of bread, golden and fragrant, rising from humble ingredients. It was a small miracle, repeated day after day, and for the first time in what felt like an eternity, I felt a flicker of something akin to hope.

Mr. Dan never pushed. He’d simply nod, a faint smile playing on his lips, and hand me a task. “Leo, the croissants today,” he’d say, his voice a low rumble like distant thunder, a sound that promised no storm, only comfort. Or, “Leo, the sourdough needs feeding. Treat it gently.” And I would. I’d scoop the bubbling starter, its tangy scent a living thing, and mix it with flour and water, a ritual that grounded me.
