The air in Chef Antoine Dubois’s opulent, yet somehow still slightly chaotic, kitchen was thick with the scent of roasting garlic and something vaguely floral that I couldn’t quite place. It was the kind of scent that made you want to both lick your fingers and question your life choices. I clutched my oversized portfolio, the edges a little dog-eared from nervous handling, and tried to project an aura of professional confidence. Inside, my stomach was doing a frantic flamenco.

Chef Dubois, a man whose pronouncements could curdle milk from fifty paces, stood before me, his arms crossed over a pristine white apron that seemed to absorb all ambient light. His expression was a carefully cultivated mask of impatience, a look he’d perfected, I suspected, while waiting for a sous chef to correctly julienne a carrot.

“So, Marvellous,” he began, his voice a low rumble that vibrated through the very marble countertops. “Show me. Show me this… ‘essence’ you have captured.”
