Eunice, Coco, Karla, and Jen: The Recipe Posse

Amy reminisces about her dear friends. Imagine them gathered, sharing stories and laughter over Amy's creations. They know the chaos well! These Young ( aged 50 to almost 90,) are major cookie monsters when it comes to anything that I cook or bake.. They are My taste testers who have unbiased , truthful opinions about what I create..dare I say... They love My homemade soups and stews which can be found in My first Amy Kathryn Anna's Super Easy Recipe Book. Dud You know that portobello mushrooms and Rona or grape tomatoes combined with jicama , parsnip, rutabaga,and turnips and maybe add potatoes if You must will thicken a soup or stew on their own..it's healthier especially for diabetic,renal and cardiac patients..like Me... When using meat cut.off all of the fat. Use only oils without any heavy taste . No salt .never never never. It will come from the vegetables....

Oh, my dear friends! Eunice, Coco, Karla, and Jen. Just thinking of them brings a warm, fuzzy feeling, like a perfectly baked cookie straight from the oven. They are my recipe posse, my official taste testers, my confidantes, and, dare I say, the reason I often have to double-check my measurements after a particularly enthusiastic explanation from Rex, or a sudden, urgent need to retrieve a runaway squeaky toy from under the refrigerator. These amazing women, ranging from their vibrant fifties to their distinguished, almost ninety years, are the true cookie monsters. When I present them with anything I’ve concocted in the kitchen, their eyes light up with an anticipation that rivals a child on Christmas morning. They have unbiased, truthful opinions, the kind that make you blush, but ultimately, the kind that make my recipes shine.

I can just picture them now, gathered around my kitchen island, the air thick with the comforting aroma of whatever I’ve managed to create amidst the delightful chaos. Eunice, with her ever-present twinkle, would be dissecting the texture of a newly baked scone, while Coco, her laughter a melodious chime, would be enthusiastically devouring a spoonful of my latest soup creation. Karla, ever the pragmatist, would likely be offering a constructive critique, though her appreciative nods would speak volumes. And Jen, with her gentle smile, would simply be enjoying the company, the food, and the sheer joy of it all. They know the drill, they know the fur babies, and they certainly know Rex. They’ve witnessed firsthand the whirlwind that ensues when the Chihuahua, a tiny whirlwind of boundless energy, decides a stray piece of carrot is the most fascinating thing in the universe, or when the hyper Chiweenie, a blur of enthusiasm, attempts to “help” by nudging a bag of flour with his nose.
